Yippeeeee I finally got round to buying myself a muffin pan. Baking can start and what better time – it is winter after all! A friend, Tam made these superbly yummy delish corn muffin vibes more than a year ago and I have been planning on making them ever since. Last night I did and I couldn’t stop eating!!!!
These are so quick and easy: corn kernels, spring onions, chilli flakes, some eggs and cream. That is all you need, awesome if you’ve got wheat intolerant friends and you can’t think of something to make. You pop them into the oven for 15 mins (or so the recipe says – I had them in for over 20). Serve with a dollop of cream cheese or just eat them. I have been stuffing my face all evening. These are the perfect snack or dinner party starter, say goodbye to chips and hello to corn muffins! I’m off to get another …
