Veggie Burgers

Who doesn’t enjoy a burger? I certainly do and one of my favourite to make at home is a veggie burger. I know all the meat eaters out there are cringing and say no no no a burger without meat? Believe me when I say I’m not saying all burgers should be meat free, I do really enjoy ostrich, venison, chicken and standard beef burgers, but the veggie burger is something of a treat. And what’s even better is that I always have a pack of burgers in my freezer. I get my patties from Woolies, they make the BEST veggie patties out there. Not those disgusting things that try to be meat, this is all about the veg and it’s packed with corn and peas and good stuff. It’s not trying to be anything besides what it is and that’s what I like about it. This is also a super simple little meal to put together in about 20 minutes and a lot of what is used comes from the freezer, so it’s a great end of the month meal or I don’t feel like shopping vibe. As long as you have some fresh salad stuff you’re good to go. Make sure you have the following in the freezer – veggie patties, bake in the oven chips and a heat and eat roll (in this case I used Ciabatta).

Switch the oven on and stick in a handful of chips, the roll and a pattie and let the oven work its magic. After about 7-10 minutes (depending on your oven) take the roll out, flip the pattie and give the chips a bit of a mix up. While this is cooking you can prepare the roll. I always have a bit of butter (can’t have enough of that I think) with a drizzle of mayo – this time I had some guacamole so I used that as a base. Add a few lettuce leaves, slices of cucumber, onion and chilli  – or whatever you like. Sit back and wait for the chips to turn a pale golden colour and the pattie is heated through with some crispy edges. Put it all on a plate, obviously put the pattie on the roll, add a slice of cheese and enjoy! Trust me you’ll love this. Easy peasy lemon squeezy … mmm I might have one for lunch!
