I Make My Version Of A Green Salad

I may have mentioned before that I am not the biggest fan of lettuce. There really are only certain types that I enjoy eating, mostly I just eat lettuce because I know it’s good for me. However I really do prefer the less is more approach when making a salad. With the warmer weather I once again took the opportunity to enjoy something fresh and crunchy and so I made myself a green salad. So I used half a bag of Woolies crunchy and tangy version and then included a whole bunch of yummy things to make the salad yummy delish. One thing I remember growing up is that the Wam always taught me to have a colourful plate of food and I think subconsciously this has stuck with me always. I adore red onion so of course this was added into the mix, fresh avocado (another fav), the staples of cucumber and tomato and my ultimate veg asparagus! I didn’t have any feta cheese, if I did this would have been right in there. I’m normally not big on salad dressing but I thought this needed a little something something, so I made a light(ish) dressing of mayo and lemon juice. Quick and easy and rather yummy – although a bit too much lettuce for my liking! Haha.
