Making Pizza with a Wrap

You may have noticed that I really do luuuuuurve pizza, I have written about it a fair amount (probably not as much as I actually eat it tho, teehee). But sometimes you want a pizza that is good and tasty but without the full block of cheese. My friend Haylz showed me this wonderful combo a while ago and when we had a picnic style dinner at my place I decided to make these.

What I like about them is that you use a wrap as the base – so it becomes thin and tasty and it’s really quite light. Another bonus is that you can buy wholewheat low GI wraps instead of white flour ones. This is what I used. You need to bake the wrap for a few minutes to get it slightly crisp. Then I just use a little spread of tomato paste (you can get a bit creative and make your own tomato sauce, but this works perfectly well), then you add a sprinkling of cheese and I really mean a sprinkling. For these I used salami, feta and a couple slices of grilled aubergine. You pop that back into the oven and let the cheese melt and the ingredients heat through.

I like to add fresh herbs at the end, but this is totally up to taste – I added coriander on my slices of pizza for this one. This is also a super quick and easy meal when you’re rushed for time or just don’t have all that much in the fridge. Keep a stash of wraps in the freezer for occasions such as these. Enjoy!
